This year has brought big changes for The Bath Priory. It reopened in spring after a six-week refurbishment, with a new chef at the helm of its Michelin-starred restaurant (one Michael Caines, who made his name at the Priory’s sister hotel, Gidleigh Park), and this summer sees the relaunch of its garden spa.
Thankfully, the understated elegance that has characterised the Priory – think Gidleigh Park’s country house aesthetic transposed to the suburbs – remains in place. The surroundings are almost exaggeratedly English. Each of the 26 individually designed rooms is named after an indigenous flower (go for Lilac, which is decked out in light greens and cream, and has its own balcony), the landscaped lawns ring with the sound of croquet, while West Country produce plays a starring role in the restaurant, with a menu full of dishes such as raviolo of quail with wild mushrooms, and john dory with belly pork and crab. Don’t be put off by its location in the heart of the red-light district in Vesterbro, five minutes’ walk from the main station. This just-opened boutique hotel, part of the tiny Guldsmeden group, is an elegant eco-friendly palace of Danish chic with Balinese touches – think blonde parquet floors, wicker chairs, Persian carpets, comfortable teak beds and art on the walls. A labyrinthine spa is on hand if you need a pummelling after a hard day’s sightseeing, and a heated Ibiza-style courtyard garden is an oasis for working your way through the list of organic cocktails (they only use a local Danish liquor supplier). In keeping with Copenhagen’s current status as Europe’s eco-capital, a lavish organic breakfast is included, including local cheeses, meats, breads and pastries.
